tomato, avocado & hearts of palm salad

Apparently it’s a good week for Rach and I. I saw this recipe and wanted to try it out since I’m not too familiar with the hearts. I got the ingredients and then literally the next day, the lovely Mrs. Myers at Eat Move Write had a veggie challenge to try a new veggie. Perfect!
Onto the eats! I have been on a major avocado kick lately and this sounded like a refreshing summer salad and great way to try the hearts! I thought it was absolutely delicious! The taster? Not his favorite. Fine with me, I’ll finish up the hearts and avocado without him ;)
The verdict on the hearts? I liked them because they reminded me a lot of artichokes and I love artichokes. It was an easy sell, what can I say? I’ll try them in other salads very soon!
Salad:
sliced tomato, avocado and hearts of palm

Dressing:
juice of one lime, 1/2 lemon, splash of orange juice and splash of olive oil

sprinkle veggies with salt and pepper and dressing. serve & enjoy! :)

Haha, that's Italy's colors! I've never really tried heart of palm before. I wonder if you can cook it into something?

Heart of palm is such a big thing where we are in Brazil. I had heard of it before moving here and had eaten it, but was never really a big fan. I've found I like a tiny bit in a salad, or when it is baked into things like the casseroles they have here. It can be found in just about everything thing including a pizza topping.
