It’s National Potato Chip Day! Potato chips always get a really bad rap. And I just don’t always agree with it. I mean, most of the ingredient lists are really simple, containing very few, real ingredients. Yes, there is oil. But I’m really not scared of oil and a little fat. Especially if it is something really satisfying. :)

So today I want to share a recipe with you that is a family classic. It’s something we have EVERY Christmas (it really wouldn’t be Christmas without it) and always makes me think of my Grandma.  This is her recipe, passed down to me through my Mom and Aunt and now I’m here to share it with you.

Clam Dip

  • 2 – 8 oz packages reduced-fat cream cheese
  • juice from one lemon
  • 12 oz minced clams, reserve liquid
  • 1 tsp Worcestershire sauce
  • potato chips

Whip cream cheese with a fork until smooth and fluffy. *This is a very important step!

Add lemon juice and whip again until smooth.

Add minced clams, Worcestershire sauce and mix, adding reserved clam juice to taste.

Refrigerate for at least 1/2 hour and serve with potato chips.

 

 

Don’t be scared. As bizarre as it sounds, I promise it’s tasty. Just don’t blame me when moderation goes out the window. It really is hard to stop. ;)

    Favorite chips are definitely jalapeno kettle chips. I would eat them every.single.day if i could!!

    Favorite chip . . . that IS a hard one! I think mine would be a three-way tie between Kettle salt and vinegar chips, (um, or Spicy Thai — those are awesome, too!), Whole Grain Milling Co. tortilla chips, and the mixed veggie chips from Terra.

    OK. I think I have to walk to Mississippi Market during my break! (Drat you, chips calling my name from four blocks away!)

    Yum, I love all kinds of Terra chips!! I think my favorite chips are probably tortilla chips- especially the really thin ones straight out of the fryer from a Mexican restaurant. Yumm…. :)

    I loove Tim’s Cascade. Can’t get them in new york very often though :(
