huevos rancheros

This is an easy, satisfying meal (although anything that involves eggs usually is for me) that comes together quick and provides lots of filling protein and fiber.  I served my eggs over a bed of organic baby romaine and black beans, sprinkled with Habenero hot sauce.

There is something about eggs and beans that I just love! Maybe it reminds me of Mexico – beaches, ocean, sun……take me back!!

I have never had a true huevos rancheros. They always look so good though. Since being in Brazil I've grown to love a simple egg sandwich with cheese on pao frances (a small French bread). It is a popular breakfast item there. At home I like to stir lots of veggies into scrambled eggs green pepper, onion and spinach work well.

No recipe needed! I just used canned black beans and cooked the eggs- perfect for busy weeknights!
