It was about the time that the taster and I started getting serious that I really started getting into cooking. Of course I cooked up to that point, but I had a lot of grilled cheese and tomato soup from a can many a nights while I was in college. One particular summer stands out in my mind. I started getting a little more creative and made things like blueberry martini’s and sushi, but our standard summer meal was grilled¬†fish and green beans almondine.

Once it started to feel like summer around here, I knew just what I wanted and a throwback meal was in order. Sure the grilled swordfish was great, but green beans almondine has to be one of my favorite ways to have green beans. Crisp beans, crunchy almonds and flavorful garlic all in one dish.

Green Beans Almondine – 2 servings

  • 8 oz green beans, trimmed
  • 2 cloves garlic, minced
  • 1 Tbsp butter
  • 2 Tbsp sliced almonds

Heat large pan over medium heat and spray with cooking spray. Add green beans and cook for about 3-4 minutes until tender crisp. Add garlic, butter and almonds to pan and keep on heat for about one more minute.

    i had green beans last night too! i remember my mom at the grocery store picking out ones for dinner – that was my job. it doesn’t appear stores have huge bins out like that anymore.

    I used to detest green beans. then my roommate bought a Costco-sized bag of frozen green beans, and I’ve developed quite the affection for these crunchy little sticks!

    I love that! So simple, yet a great flavor. I’m forever sneaking almonds into recipes. I even dropped them on top of a piece of pizza the other day. Seriously – much better than it sounds :)

      I would never think about almonds on pizza! If you say it is good though, maybe I’ll sprinkle a few on next time I have pizza, can’t hurt, right? :)

    I love these! I have never made it from scratch but there is a frozen one I buy (idk why I don’t just make it from scratch though – it’s easy enough)!

    This is such a nostaligic recipe for me! My Mom doesn;t cook much but she had one standard dinner party menu for all the years I was growing up – and it featured green beans almondine. ly Her recipe was almost exactly like yours (except that her garlic was of the powdered variety. I loved them, and I still do! Yum!
