trip to colorado

The trip to Colorado was a wonderful one! The taster and I walked around Denver so much that my legs actually hurt! (Sedentary job much?) The food was fantastic, some interesting drinks were had (a cucumber mojito that will have to be re-created) and I love that flip flops and a fleece are totally acceptable for pretty much everything! I’ll spare you every last detail and get right to my favorites:

Dinner at Rioja was amazing to say the least. It was recommended to us by friends and we would have gone back every night if not for the sake of variety. My favorite was the paella gnocchi: “rice crusted saffron gnocchi, PEI mussels, Hawaiin blue prawn, calamari, orange scented chicken sausage, artichoke hearts, smoked paprika tomato broth.” Could be a strong contender for the best thing I ever ate.

Day trip to Estes Park

Fondue & Flowers in Boulder, which I’m convinced is the hippiest city ever, in addition to being the home of many of my favorite food brands: Justin’s Nut Butter, Simply Boulder Sauces, Skinny Crisps, Celestial Seasonings, etc…

Red Rocks Amphitheater and some very necessary stair-climbing.

Denver is such a fun city – I love how people are so active there. I loved Rioja as well.

Wow, that brought back a ton of memories! My family used to take vacations to Colorado every summer and we would go to Estes Park a lot.

I’m going to have to pull out the old family pictures and take a look at some of the beatiful state of Colorado.

FUN! i haven’t been to colorado in ages but definitely need to change that. estes park is so gorge and you and the taster are adorable. should be in MN in the next month – we should def get together to catch up!

I’ve heard Boulder, Santa Fe, and Portland are in hot competition for the “most hippie city” award! :)

I’m so glad you want to bake-a-long! Yeah, I’d buy the book, or you could get it from the library if you’re not sure you’re going to become a huge bread baker. (But this method is so easy, I HIGHLY recommend it!) You’ll also need a baking stone. Can you email me (there’s a link on my profile page) so I can get you in on our email conversations? Thanks!

Beautiful photos from what looks to have been an awesome trip! I have an ex-boyfriend that recently moved to Boulder, and he absolutely loves it there. I’ve heard nothing but good things about it! I also love that it’s the capital for so many great health food products.
