cheesy leek french bread

Sometimes I find myself in a tough predicament.

Which JCrew shirt should I order? (All five is ok, right?)

What am I going to wear on my feet on the day of my wedding? (I’m having second thoughts on the shoes I have. Eek!)

And then especially fun predicaments like, what am I going to make with a bag of leeks?

I thought about pasta. I thought about stir-fry.

But then I had a major carb and cheese craving and cheesy leek french bread was born.

So if you find yourself with lots of fresh leeks (have a garden or get them from Dad’s garden like me?) make this.

And if you don’t? Go get some leeks and then make this.

It’s not fancy, it’s not really healthy, it’s just really, really good.

Cheesy Leek French Bread
Recipe Type: appetizer
Prep time: 5 mins
Cook time: 10 mins
Total time: 15 mins
Serves: 4
Ingredients
  • 2 medium-sized leeks
  • 2 Tbsp butter
  • 3 cloves garlic, minced
  • 2 Tbsp greek yogurt
  • 1 Tbsp mayo
  • 1/2 cup (overflowing) shredded cheese (I used a blend of mozzarella, monterey jack and cheddar)
  • 1/2 loaf french bread
Instructions
  1. Clean and trim leeks.
  2. Slice in half length-wise and then cut into small pieces.
  3. Heat butter in pan.
  4. Add leeks and garlic and saute for about 3-4 minutes.
  5. Let cool.
  6. Slice french bread in half length-wise.
  7. Combine yogurt, mayo, cheese and leek mixture.
  8. Spread leek mixture onto bread and broil for about 3-5 minutes until golden brown.

I’ve made all kinds of cheesy garlic bread, but never with leeks. The yogurt/mayo combo is new to me, too. This may not be healthy, but it looks considerably less UNhealthy than most cheesy bread recipes. Can’t wait to try this. Looks fantastic.

It is really creamy, I tried it without the yogurt and more cheese, but it just wasn’t creamy enough – and needed something else to bind it!

I changed my mind a week before my wedding and bought new shoes. They are still one of my favorite pairs of shoes, even after 3.5 years of wear. If you’re not 100% sure they will be comfortable/what you want – go buy some new ones! (Who doesn’t love an excuse to buy new shoes?) :-)

Second shoe thoughts are totally fine… I sent back 6 different pairs before I decided! I’m now a Zappos VIP – doesn’t hurt to have free overnight shipping & returns! ;)

Love cravings for cheese and bread! I mean is there seriously anything better? I’ve never cooked with leeks, but should probably give it a try. I can’t even remember the last time I had leeks. HA! Have a great day! :)

I seriously brought 3 pairs of shoes to my wedding and changed them a few times. My photographer loved it and I have pictures with the different shoes. No shame!

What an awesome spin on garlic bread, I love leeks! I’ve never cooked with fresh before, only the frozen from TJ’s, but really really enjoyed them!

Thanks! I’m not too worried, we’re in DC, but we’re still supposed to get a ton of rain and high winds which usually knocks over a ton of trees onto the power lines.

This bread looks cheesy and wonderful!!!! And as for wedding footwear… wear the pretty shoes and bring along flip flops to change into!

There is just something about cheese and bread and I’m all in! The leeks make this even better. I went with simple sandals and then switched into new tennis shoes at the reception. No one sees them if you have a floor length dress – go for comfort! It’ll be a great day, but a long one on your feet. :)
