Hi Guys,

Thanks for the wise words on my “lack of posting” post. I just wanted to let you know what was going on with me these days.

I’m thinking that my next daily eats post should be another themed “diet or meal plan” post like I have done previously! They are so fun for me to do – hopefully for you as well.

5.2.12

Beverages: coffee + 1/2 & 1/2, water, green tea. The standards.

Breakfast: It had been a few days since I had eaten eggs so I was majorly craving them. 2 eggs + 1/2 hemp bagel topped with coconut oil. Possibly one of the best breakfasts ever…

Workout: 45 spin class with my favorite teacher. It was hard, sweaty and wonderful – all at the same time.

Lunch: Was eaten in two parts – I had some things that absolutely needed to be shipped out for work today, so I had to get them ready and drop them off before I could take the time to eat a real meal.

part I: kale & spinach dip (trader joe’s) + crunchmaster ancient grain crackers (that I brought home from the Celiac Disease Foundation Conference last weekend).

part II: lemon chicken & arugula salad (trader joe’s) on a bed of spinach. The salad is delicious and has a couscous and quinoa mix with arugula and chicken, but pretty small (about 300 calories) and definitely lacking in the veggies.

Snack: bowl of strawberries + kashi cereal (honey sunshine) + coconut milk.

Wine:

Dinner: I am working on a quinoa salad recipe, so this was the test run. It contained quinoa with a dressing, asparagus, leeks and shrimp. It was delicious and I’ll get the recipe for you soon! I served it on about 2 cups of spinach, wilted to bulk it up a bit.

I’m nibbling on some jelly beans that we’ve had for months now and headed to bed!

Have a wonderful weekend! Any fun plans?

Is it really April? I’m still not convinced.

Coffee: I started with some coffee + 1/2 & 1/2 but just wasn’t feeling the coffee so switched to some green tea. Some days that happens – I have no idea why.

Breakfast: I hadn’t had eggs in a few days so I was craving them. Eggs and toast is probably what I would consider my standard/favorite meal to be – anytime of the day! I never get sick of it. Yesterday I had, sourdough rye bread + earth balance + 2 eggs.

I had a busy day of work, spring cleaning and prepping for an exciting interview – cross your fingers!

Workout: This really isn’t a “workout” but I wanted to move a little (but didn’t feel like actually working out) so I went for a short walk to pick up a few things at Whole Foods. (1.5 miles) The weather in LA was absolutely gorgeous – it felt so good to be outside!

Lunch: Vegetables were, uh, lacking this past weekend so I was needing produce in my life! I had an apple while putting everything together.

Salad: mixed greens + blue cheese + nuts + dried cranberries + champagne viniagrette.

Side: bowl of kale sauteed with coconut oil.

Snack: 2 cups of Movie Theatre Popcorn from Trader Joe’s. I love my popcorn.

At about 6pm I decided I should do my taxes – normally I get them done right away in February, but I’ve been putting them off, mainly because I thought it was going to be a huge pain this year, but it really wasn’t. I have two small glitches to work through and then they are done! (Let’s hope the “small” glitches are just that)!

Taxes –> Wine!

Dinner: One of our go-to meals of late has been turkey meatballs (Trader Joe’s) with marinara. I usually serve mine over greens or vegetables instead of pasta because I never miss the pasta and I’d rather eat really good pasta than average pasta.

kale + 4 turkey meatballs + marinara + green beans

And 2 ginger chews to finish the night off!

Have you done your taxes? Please tell me I’m not the only procrastinator!

Hello Friends and Happy Spring!

3.20.12

Coffee: Still on the 1/2 & 1/2 kick…

Breakfast 1: 1 packet instant oats + 1 Tbsp almond butter. I ate about half of it as I was leaving to work out shortly after and needed something, but didn’t want too much. Pretty ugly and very boring!

Workout: Today I checked out up dog fitness, a yoga and cycling studio in my neighborhood. I’ve been wanting to try it out for a long time and I saw a groupon last week so I grabbed it! I took a great 45 min spin class. It was part motivational speech/part gospel church/ part gay dance club all rolled up into a spinning workout. It was fabulous.

Breakfast 2: egg + kale chips (sample from Expo West) Kind of random, but kind of like greens and eggs!

Lunch: 1 can tuna (with touch of mayo, onion, celery and shredded cheese) broiled on 1 slice sprouted bread + salad (romaine, arugula, olive oil, red wine vinegar, raw parmesan cheese, salt & pepper) + raw sauerkraut

Snack 1: small apple x 2

Snack 2: I had to take a few pictures (so embarrassing) so we had a photo shoot and wine on the roof!

Dinner: I didn’t have anything planned for dinner so we decided to finally check out the sushi restaurant around the corner. We’ve been a little nervous because it always looks empty, but I think we’ve been looking too early. I’m still not really used to the later dinner life of LA. (I’m used to my 5:00 happy hours, which really don’t occur here). I’ve also been a little nervous that we would like it and then want to go all of the time. It was about 8pm by the time we went and the restaurant was pretty busy and continued to get even busier as we were there. I had another glass of wine (rebel) and we shared 5 rolls that were all delicious. I kind of want to go back tomorrow for lunch…

I’m snacking on a square of dark chocolate and getting ready for bed. Have a great Wednesday!

Today’s daily eats post is all things blog-world related! From breakfast and lunch to an event at night, this is blog living at its best!

Breakfast: Lindsay’s (Pinch of Yum) Powered Up Pumpkin Oatmeal. Um, yes this was definitely a yum. I was missing a few ingredients (who doesn’t have brown sugar?!) so mine consisted of:

1/2 cup oats

1 whole egg

1 cup water

1/2 cup pumpkin

toppings: 1 Tbsp coconut oil, cinnamon, nutmeg & toasted pecans

This was SO filling! I literally had to take a break half-way though. Brown sugar would have really made this taste like a treat, I wished we had some, but I’ll definitely be eating it again!

Mid-morning, I was off to Whole Foods for job #2. I had some green tea to keep me from freezing! (do you know how cold stores are? brr!)

Lunches have been a bit tricky lately. One of my jobs has me doing product demos at Whole Foods and they are typically scheduled from 11am – 2pm. Too early to eat lunch before hand, and hard to wait until after so I’ve been eating a lot of Whole Foods salad/hot bar food.

Today though, I planned ahead and made something that has been on my list for a while. Holly’s (The Healthy Everythingtarian) Chickpea Chopped Sandwich. I had it in the form of lettuce wraps because I needed food asap when I got home at 2:30 – it was amazing! I’m so glad I have leftovers in the fridge.

It contained:

chickpeas

artichokes

roasted red pepper

sauce: olive oil, touch of mayo and feta cheese

After “lunch,” I had some more work on job #1 and then it was time to get ready for the Paleta event that I attended last night. I was hoping to fit in a workout this afternoon, but I just couldn’t make it happen. Sometimes life gets in the way!

I snacked on some dried pineapple and mango while working. (Like our stocking??)

The Paleta Holiday Party was a lot of fun, fave LA blogger Lynn (The Actor’s Diet) was in attendance and I also met a number of very interesting people, it was great! {Paleta is a Los Angeles Organic Gourmet Meal Delivery Service, offering various meal plans and cleanses.}

Throughout the evening I enjoyed a few drinks (starting with champagne + mango coconut water),

and snacked on cheese and crackers,

before making our way to the gorgeous table, filled with a great variety of food.

(How cute are these napkins?!)

I tried a taste of most of the items – the Cod was absolutely delicious and I loved the Curried Quinoa Salad and Caramelized Rainbow Carrots. The food served at the dinner are the actual foods they send out to clients, which was really surprising to me. Everything was really good and tasted like homemade food.

On our way home we broke into the goody bag and split the pumpkin bar. I’m only sharing the picture because I want you to see my hilarious, chubby hands. I don’t know how it is possible, but I managed to have about 18 hand rolls…

I’m snacking on a few triscuits now, before heading to bed. It’s been a long day!

I can’t believe it is already mid October! It was a hot, hot day in LA today. Abnormally hot although we still saw people with sweatshirts, coats, etc. I wonder if we will ever wear a sweatshirt when it is 90 degrees out…

Apartment searching is our main focus at this point, but after two straight days, we took the morning off.

The day started out with a walk – we walked around the neighborhood for about 40 minutes, including a stop for coffee.

Then it was time to work for a few hours – I munched on a bag of cashews, almonds and dried cranberries.

I wanted something light as I planned on going to yoga in a few short hours. Planned being the keyword, we left too late and didn’t make it in time. Tomorrow, it is. Since we were already in Santa Monica, we decided to explore a bit and take a walk on the beach. First though, we came across a Whole Foods Market.

One of the only things that could make me feel better about missing yoga (I needed yoga, even the Taster agreed) is a tour of a new Whole Foods and an early lunch. The salad bar was pretty phenomenal and I loaded my box with all lettuces (romaine, spring mix, spinach and kale) then topped with cabbage crunch, lemon tofu, broccoli rabb, roasted cauliflower and hummus. Perfect and the salad bar was $2 off per pound today so it was actually pretty reasonable!

Then we hit the beach for a quick walk, which was just what we needed. I must admit that the apartment hunting has been a little more stressful than I thought it would be. It seems like each place we go is missing one of the aspects we are looking for.

Then it was back to the apartment search and we looked at about 5 different places. Nothing great, but we have narrowed it down to two definite neighborhoods, which will hopefully make the process move a little quicker now.

A few hours after lunch, I was of course hungry, so I munched on an apple,

and then some triscuits.

After we returned to my cousins, it was time for pizza, salad and wine. (x2 on the food) Really good pizza – NYC style!

More work and I’m off to bed!

Cross your fingers that we find an apartment today!!

I’m officially in the midst of wedding-week madness. But besides a minor breakdown on Friday (it was just a very emotional day) I think I’ve been handling everything pretty well. Others may disagree.

Yesterday was filled with last minute errands and I declared it a day for myself!

The day started with some coffee and a gorgeous sunrise. I’m definitely going to miss this view.

Then it was time to drop off the Taster at work (we are a one car family) and start my other errands:

body work appointment

drop off dress to be pressed

Breakfast: In between the commute and errands I had a Two Moms in the Raw Bar – Gojiberry Granola – much better than I had expected although the first ingredient was agave and I’m not really a fan of that.

10:30 Yoga Sculpt – I was at a different studio than normal and it was a great class – I felt wonderful and the class flew by. Love those.

Snack of mini Lemon Zest Luna Bar that they had at the studio. Yum and needed energy.

12:00 Real Ryder Spin – A spin class that is on bikes that turn – One of the studios has the Real Ryder Bikes and I’ve been meaning to take a class for the last few months. “Turning” was really hard – have you ever heard of Real Ryders? (Part of my me day was being able to take two classes, a treat!)

Lunch: Another part of what made the day special was lunch out at Ecopolitan, a Minneapolis raw restaurant. I’ve been there many times, but not recently and I thought some raw food would be good nourishment. I went with my standard Raw Notchos – lots of raw kale, marinated mushrooms, peppers, cucumber and spicy notcho sauce and cashew sour cream. Delicious, why didn’t I get on my raw food kick this last summer?!

More errands:

proofing the wedding programs (really happy with them!)

get ring cleaned and sparkling

Then I headed to Caribou to work on the computer and go through emails while I waited for the Taster to finish work. The weather really feels like fall today and a Chai Tea Latte sounded perfect. (2% Milk, 1.5 pumps of Chai) I wish someone would invent a chai tea latte that doesn’t require a lot of sugar. I’ve used some almond milk + chai tea bag + stevia in the past, but it just isn’t the same.

At some point during the day I realized that I needed sushi. Well, ok, I think I just really wanted to go on a date. With all of the craziness going on with the wedding I feel like the only thing we talk about is what needs to be done, what hasn’t been done and yada, yada.

So we headed out for sushi happy hour – originally we were going to go to the spot in our neighborhood, but it ended up being closed so we went to one of our favorites, Fuji-Ya. We realized it would probably be our last time going! Ah!

Dinner: We sat at the sushi bar, which turned out to be a really good idea – complimentary cucumber salad (tasted a lot like mine!) with fried fish and then pineapple with raspberry sauce at the end of the meal. We ordered goyza (I HAVE to!), spicy salmon, spicy tuna and soft-shell crab rolls and the Taster had some sashimi as well.

It was great to take a break from the week and the wedding was only brought up once. Just what we both needed.

My Mom and Aunt arrive this afternoon and then the rest of our families will be here Thursday – let the festivities begin!!!

11:04 Breakfast Two: part of everything bagel with cream cheese – exactly why it is not good to wait so long to eat – I couldn’t stop! Although it happens rarely that I would put off a meal, even Nutritionists mess up sometimes!

1:30 Lunch: organic turkey burger + caramelized onions + ketchup + mustard with a side of kale and spicy cucumbers (recipe coming soon!) Incredibly ugly meal. Incredibly delicious meal. (Oh and last packed lunch for a while, which is SO exciting!)

3:00 With all the food that had been eaten in the last 5 hours, its amazing that I was hungry again, but such is life sometimes. Starbucks Double Shot (have you ever had one? love them) on the way to get our…

Marriage License! Whoowhoo!!! I love crossing things off the list!

I was planning on attending a yoga class, but we got an invite to a new restaurant opening in our neighborhood and I decided it might be a little more fun to go on a date night.

Crooked Pint Ale House is a new restaurant opening this weekend – even though we are leaving in a few weeks, it is so nice to have something so close to home.

It’s located on Washington Avenue and the atmosphere is great – lots of wood, brick, a stage for live musical and they’ll be showing movies and games on a huge screen as well. I kind of want to go back and hang out asap. This weekend?

I started with wine and the Taster had some beer- they have tons of craft beers on tap – his kind of place. Very reasonably priced as well.

We decided to try the chorizo corn dogs which were a fun twist on the standard corn dog. We liked them, but I’m not sure we would get them again, our server mentioned that the wings were amazing and they had some other fun appetizers to choose from.

I decided on the Rainbow Chopped Salad which was baby romaine, red cabbage, chopped pears and apples, blue cheese, walnuts and red wine vinaigrette. I loved it and it was just the kind of salad I was in the mood for.

I’m not sure if the Packer game or maybe the lack of a State Fair Trip this year that influenced the Tasters meal decision but he tried the Sconnie Cheese Curder – a burger with cheese curds on top. Totally over indulgent and really delicious. (I happily shared some bites and fries for salad.)

We had a great meal and service and can’t wait to go back before our move.

And just like that, the week was coming to an end. Today I went to yoga first thing and now it is my last day at work so I’m a bit emotional with everything going on. I’ve got a cooking class with Mercedes tonight to look forward to thankfully and more wedding preparations this weekend! {Happy Birthday Mom!!}

Have an amazing weekend! Fun plans?

After trying Victor’s 1959 Cafe Champagne Mojito, I knew I had to try and re-create it at home. Ok, I admit it, I picked up all of the ingredients the following weekend. I need to try to re-create it and I needed to do it asap.

Mojitos made with champagne are quite delicious. They are bubbly, bright and oh so refreshing. Perfect for these last days of summer but I’ll probably be drinking them year round.

Thankfully I had two tasters that evening (Mercedes was over) because it took a few tries to get the right proportions of simple syrup, lime and champagne. Really hard work I tell you but don’t worry, I’m here to help.

It is really easy to make, in fact it reminded me a lot of the Basil, Cucumber & Mint Vodka Spritzer I made earlier this summer with a basil and cucumber simple syrup. Simple Syrup is so easy to make and adds such a nice touch to cocktails.

Make it this weekend and enjoy your labor day holiday!

Monday started like most – with a yoga class. But then the similarities ended.

It was a long day of traveling. I had my last work trip and so I’m currently down south in the land of shrimp and grits. For the record, I’m only allowing myself one meal of grits – do you know what they put in that stuff?! It is soooo good, but not exactly easy on the waistline. Georgia was the place that introduced me to grits, before then I had no idea of their glory. Needless to say, I’m a little obsessed. Hopefully tonight I’ll get some grits!

6:30 am Yoga Class. I needed to go to yoga before I left because I wouldn’t be able to take a class for the next few days – the horror!

The airport was really quiet so I had plenty of time before my plane took off. I stopped into the French Meadow Cafe for coffee, water and breakfast.

I was going to get oatmeal for breakfast but decided that eggs, bacon and toast was more what I was after. I should have just skipped the hash browns all together – I didn’t eat any of them.

On the first leg of the flight I was busy preparing for the week and doing some writing and meal planning.

When I landed in Charlotte I was ready for a meal. I always try to walk around the airports so that I’m not sitting the entire day. This way I can also scope out all of the food options at well.

It may seem rather unlikely that I ate at Sbarro’s but it was actually pretty easy to build a healthy meal full of vegetables! I had a salad (should have gotten the small, the large was huge), side of vegetables and a meatball. It was great.

On the second leg of the flight I snacked on part of a thinkThin bar, read some Elle magazine and took a miniature cat nap (shh!!).

When I landed in my third state of the day, Florida, I jumped into a car to finish my trip to Georgia!

I managed to track down the one natural food store on the island and then it was time for dinner! Being in shrimp country, I was really on the hunt for shrimp. This grilled shrimp and scallops with succotash (SO good) and green beans was just what I was looking for.

Now I’m catching up on things online and heading to bed! Hope you had a great start to your week.

PS. I have two more weeks of work, three more weeks until the wedding and four more weeks until we move!!!
