Stir-frys are always a great choice for simple and healthy meals that come together in minutes.

In fact, usually the rice takes longer to make than the stir-fry itself. If you are short on time, consider trying frozen brown rice or instant brown rice. (You can also make your own brown rice in large batches and then freeze for later use).

Then gather up all of the vegetables you have, along with some protein and have a flavorful dinner on the table in minutes!

Stir-Fry Tips and Steps: 

  1. Prepare rice, grain or pasta if using
  2. Prepare all ingredients (slice, chop, etc) so they are all ready to go
  3. Heat pan and oil in pan (you can flavor oil with garlic and ginger)
  4. Add ingredients by length of cooking time, adding ingredients that take longest first*
  5. Add sauce (can be as simple as a splash of soy, fish sauce, lime juice, sesame oil, etc.)
  6. Serve immediately

*If your stir-fry includes meat or seafood, consider cooking the meat, removing from pan and then cooking the vegetables so you don’t over cook your meat

I can’t give up avocados.

Not just yet. Last week my life changed with a simple little sandwich of whole grain bread + avocado + parmesan – broiled and topped with a fried egg. Thanks to reader Kelli for the suggestion – it is a combination worth trying!

But as much as I loved that sandwich, I needed something new and I had been wanting to combine basil + avocados for quite some time now. Originally I set out to make a avocado inspired pesto, but the feta cheese in the refrigerator caught my eye and I decided that it would be the perfect addition to the spread.

It turned out to be a very tasty addition.

The spread is delicious and so very versatile – it was delicious eaten with crackers and veggies and was just as scrumptious on a burger, I imagine the same would be the case on a sandwich.

Basil & Feta Avocado Spread

Prep Time: 10 minutes

 

Ingredients (2 cups)

  • 1 avocado
  • 1/2 cup chopped basil
  • 1/2 cup crumbled feta
  • 2 green onions, chopped
  • salt & pepper

Instructions

Smash avocado.

Stir in basil, feta and onions.

Season with salt & pepper.

Serve with crackers, veggies, on a sandwich or as a burger topping.
