Welcome to A Nutritionist Eats. I’m a Nutritionist who loves all things food: reading, cooking and definitely eating! Here you will find my journey through healthy, indulgent and everything in between. My husband and I recently moved to Los Angeles from Minneapolis and we’ve got lots of food to explore here!

Food Philosophy:

Simply put, I believe in all foods in moderation. I build my meals around vegetables, fruits, whole grains, lean proteins and healthy fats but I make sure to leave room for cheese, burgers and baguettes!

I prefer to focus on whole, real foods. I shy away from processed foods, artificial ingredients and foods that have an ingredient list a mile long. I buy Organic when possible and while it gets expensive, it is worth it to me. I’ve found that real foods with portion control works for me. Years ago when I was unhappy with my weight and myself (I weighed about 15 pounds more than I do now) I tried to eat as healthy as I could, not allowing myself a cookie, or bread; worked out all the time and then when Thursday night came around (college 3-day weekends) it was 3 days of drinks, not so healthy foods and lots of it. When I finally let go of this mentality of “week-day dieting” my weight kind of just came off naturally.  I could have a cookie on a Tuesday and the world didn’t come to an end.

Some of the food I cook is very rich, full of butter or cheese and may not seem “healthy.” This food doesn’t require a large portion for me to feel satisfied. This works for me, but like everything, it may not work for everyone.  I definitely prefer quality over quantity. With that said, I always round out a rich meal like risotto with a big side of veggies or salad.

Other meals are full of green vegetables, whole grains like quinoa and healthy fats. It is all about balance.

Why a blog?

In early 2009 I started toying around with the idea of starting a blog. I wanted to share recipes, nutrition and health tips and new exciting foods that I try. That March I just went for it and now I would classify myself as an obsessed blogger. I now can be found taking pictures of food on a consistent basis, writing down notes all the time and happily typing along on my little computer. I actually didn’t start reading other food blogs until I was into blogging a bit, which is kind of a backwards way to start but I love the sense of community that we all share.

Education:

I left a small town in Wisconsin to attend college in Minneapolis, MN which I LOVED (all but Winter) and have a Bachelor’s of Science in Nutrition from the University of Minnesota – Go Goldy!!! While school certainly wasn’t easy for me I’m so glad that I pushed through, I needed a career in food. I know eventually I will go back to school for something, I just haven’t figured out what for quite yet!

What I do:

After we moved to California, I started working with various Natural Food Companies, working in sales, doing store demos, etc. I currently work from home on a regular basis and am loving making my own schedule, although I wear sweats WAY too often.

I knew while I was in the last few years of school that I wanted to work in the food industry and my goal was the Natural Food Industry. Hospital work just wasn’t for me and I’m so happy to have found my place!

I also work with a weight-loss camp for kids, Camp Endeavor during the summer months, planning meals and teaching the kids how to cook. Introducing the campers to new and different foods – and then having them be surprised they like something (hummus) is definitely my favorite part!

Life:

On September 17th, 2011 I married my best friend and we moved to Los Angeles, California. It was a busy fall, but we are loving the sunshine in California! We enjoy hiking, walks on the beach and exploring the endless food here in Southern California!

I noticed that you are not a Registered Dietitian. You should be cautious in providing health and nutrition advice without licensure (or even more importantly…. professional liability insurance for healthcare professionals). Why have you not completed an internship program if you are so interested in counseling the public?

As you probably read above, I do have a Bachelors of Science degree in Nutrition from the University of Minnesota. When the time came to apply to internships I was/and am still interested in the wellness side much more than the clinical side. I would like to complete an internship in the next few years however because I believe it is a great credential to have!

I live in California but am trying to move out to northern Minnesota to start up a natural health store that specializes in unrefined expeller pressed oil. Hi! Found your blog yesterday through Gojee and am a big fan. I’ve been following a few cooking blogs for five years or so, and have taught myself to cook. I’ve found I too enjoy cooking with whole foods, eating mostly vegetarian and healthy eats but leaving room for cheese, wine, chocolate, etc. I’ve been getting interested in nutrition a lot lately as well, so your posts about those sorts of things are appealing too. Keep up the good work! :)

Hi Emily! I just found your blog… I feel like we have a lot in common! I love your food philosophy, and I must say we are a lot alike in the ‘education’ department! I don’t really love the ‘clinical’ side of nutrition, and as an RN I worked as a nurse for a year in a hospital and knew it was not for me! I am much more interested in the prevention of disease, etc. with real food! :) I look forward to reading more! :)

I just wanted to reach out and tell you how incredibly great I think your blog is. Real women should eat real food! After giving up a low carb/ fake sugar/no-fat/restricted everything, food is no longer my enemy! Oh, and I am leaner, stronger, happier and healthier than I have ever been (and a side benefit is that I am not crabby and starving all the time)!
