karyn’s is a place I’m longing to go back to and I was just there a few days ago. It was a great girls’ night dinner and a very memorable evening. It was hard to pick what to get because EVERYTHING sounded delicious. We decided on 2 appetizers and 2 entree’s. Everything. Was. AMAZING. I think that eating at a raw restaurant always inspires me to experiment when I get home. I can’t wait to make some fun nut cheeses. Unfortunately we were there too late to check out the raw salad and juice bar but it is definitely a place that I want to visit again on my next visit to Chicago.  Onto the meal…
Nachos: crispy corn tortilla chips with guacamole, sweetened sour cream, black olives, marinated red onions and caramelized jalapeno’s

Cheeseplate: an assortment of 4 home-made seasoned cheeses accompanied by fruit, nuts and flax crackers

Pad Thai: thin sliced coconut noodles in a jungle peanut base cream sauce with marinated shitake mushrooms, julienned peppers and a cilantro oil drizzle

Empanadas: flax and corn masa pastry dough stuffed with 3 pepper chorizo and a house blend chili spice. Served with authentic raw chocolate mole and a salsa verde

The cover recipe of Bon Apetit looked too good to pass up. Burgers layered with grilled peppers and onions, arugula and topped with a smoky aioli? Sign me up!
My version of the aioli contained a mixture of mayo, olive oil, garlic, paprika, coriander, cumin and smoked sea salt.  (I then proceeded to make a side dish of my own so that I could add some sriracha! I’m actually starting to get a little worried about my consumption of sriracha, it is out of control!!!)

This ended up being SO delicious. I ate sans bun because, well it just didn’t need it! This might be the prettiest burger I’ve ever seen  and I don’t even know if I needed the meat – the veggies and aioli stole the show!
